2 Cups Dried Chickpeas + Cooking Liquid
3 Small Garlic Cloves
4 Tablespoons Olive Oil
Salt to Taste
Soak chickpeas overnight (or at least 8 hours). Drain chickpeas, rinse them and then boil them for an hour or until soft (save the boiling liquid). Add chickpeas, tahini, lemon, salt and garlic to the food processor and pulse until combined. Slowly add the olive oil and boiling liquid until you’ve reached your desired consistency.Serve with fresh cut veggies, gluten free crackers or spread on a sandwich and enjoy!
