Perfect Blueberry Pancakes

Ingredients:

Heaping 1/3 Cup of Almond Flour

Heaping 1/3 Cup of Gluten Free Oat Flour

1/4 Cup of Gluten Free Oats

1 Teaspoon Baking Powder

½ Teaspoon Baking Soda

2 ½ Tablespoon Cane Sugar

2 Large Organic Eggs

1 Cup of Plain Yogurt

½ Teaspoon Vanilla Extract

Pinch of Salt

¾ Cup of Organic Blueberries

Directions:

In a large bowl, combine all the ingredients minus the blueberries and mix until well combined. Fold in the blueberries, careful not to crush too many. Spray a frying pan with cooking spray and heat on medium heat. Pour a large spoonful of batter into the pan and continue until you’re out of batter. When the pancakes start to bubble around the edges they are ready to flip. Stack, lather in syrup and share with your loved ones on a Sunday morning…
