My favorite candy has always been Raisinets. They are a major weakness for me. They have the potential to be healthy (chocolate and dried fruit- what can be bad?) but, out of the original box they are absolutely not. My mantra is to never eat anything you can’t pronounce so what the heck is Tapioca Dextrin– the twelfth ingredient in these candies?
On that thought, I decided to make these from scratch with just 3 ingredients and let me tell you, they taste even better than the store bought ones.
¾ Cup Dark Chocolate Chips
1 ½ Cup Plump Raisins (make sure to get the ones with no added sugar!)
Organic Cooking Spray
Line a large baking sheet with parchment paper. Place the chocolate chips in a microwave safe bowl. Spray the chocolate for about 3 seconds with cooking spray. (This gives the chocolate a nice glossy look & prevents clumping.) Place the bowl in the microwave for about a minute, stirring the chocolate every 20 seconds to prevent overheating. Once the chocolate is melted and smooth add a bunch of the raisins- careful you don’t want to overcrowd the bowl. Once raisins are covered fish them out with a fork and place on the baking sheet. Repeat until you chocolate cover all the raisins. Place the tray in the freezer for at least 30 min until the chocolate sets. Serve and enjoy!!!!!
