Baked Spiced Chickpeas

These are hands down my favorite recipe I’ve made in a while. Normal old chickpeas become the crunchiest, tastiest most amazing snack ever in the span of 30 minutes. I promise you these will satisfy your salty potato chip craving while giving you a dose of protein, fiber & iron. These are salty and savory but I can’t wait to try this recipe with a sweet variation, cinnamon-sugar anyone?

1 Cup of Chickpeas (canned is fine)

Dash of Paprika

Dash of Chili Powder

Dash of Garlic Powder

Sea Salt

Freshly Ground Black Pepper

Cooking Spray

Preheat the oven to 400 degrees. Line a baking sheet with aluminum foil. Drain & wash the chickpeas. Place the clean chickpeas on a few layers of paper towel and pat and let sit until completely dry. Most of the chickpea shells will fall off naturally, but for the one’s that don’t simply lightly pinch the chickpea and it will easily pop off. (If some are left on that is totally fine.) Meanwhile, in a medium bowl make the spice mixture. Pour the clean and dry chickpeas into the mixture and coat evenly. Pour the chickpeas on the baking sheet, carefully not to overcrowd the pan. Spray contents liberally with cooking spray. Place on the middle rack of the oven and bake for 25 minutes, rotating midway. These will burn extremely quickly so keep an eye on them!
