Vegan Almond Butter and Jam Sandwich Cookies


An almond butter and jam sandwich in cookie form? Yes please! These sandwich cookies are filled with everything I love from my childhood favorite including the sweetness from the jam and creaminess from the nut butter plus they pack an extra dose of protein, fiber and healthy goodness from the oats, almonds and chia seeds. These cookies are also dairy free, sugar free and vegan. Enjoy!


½ Cup Homemade Almond Butter

½ Cup Oat Flour (pulse GF oats in your food processor until they form flour like consistency)

2 Tablespoons Blue Agave

1-Tablespoon Chia Seeds

1 Tablespoon Unsweetened Almond Milk

1-Teaspoon Cinnamon

Jam of your choice


Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. In a medium bowl mix together all ingredients until everything is fully incorporated. Line the baking sheet with dough balls and then lightly press each down with your fingertips to form cookies. Bake for 10 minutes. Let cool.


When cooled completely, place about a teaspoon of jam in the center of half the cookies and place the remaining cookies on top to form sandwiches.
